Exotic Ginger Cumin Chicken

This recipe features boneless, skinless chicken cooked with a flavorful blend of garlic, onion, ginger, cayenne pepper, cumin, and turmeric, simmered in chicken stock, stewed tomatoes, and tomato paste, and finished with yogurt.

1 Tbsp Vegetable Oil, divided
2 lbs Boneless Skinless Chicken, cut bite-size
2 tsp Garlic, minced
1/2 cup Onion, chopped
1 Tbsp Ginger Root, minced
1/2 tsp Cayenne Pepper
1 tsp Cumin
1 tsp Turmeric
1/2 cup Chicken Stock
1 can (19oz) Stewed Tomatoes
2 Tbsp Tomato Paste
1 tsp Sugar
3/4 cup Low Fat Plain Yogurt
In large saucepan heat 2 tsp oil over medium heat. Add half of the chicken and cook 3 minutes until brown. Remove from pan and set aside. Repeat with remaining chicken.
Add remaining oil to pan; add garlic, onion, and ginger. Reduce heat to medium and cook, stirring constantly for 5 minutes or until soft. Stir in cayenne, cumin, and turmeric; saute for 1 minute.
Stir in stock, tomatoes, tomato paste, and sugar; return chicken to pan. Bring to boil; reduce heat and simmer 5 minutes.
Stir in yogurt and simmer 2 minutes.
