A traditional Greek dip that goes well with crackers, celery and carrots or in a Greek gyro. Great for parties and sharing with family and friends, it can be eaten immediately or after a few hours in the fridge for enhanced flavor.

2 cups Greek yogurt
3 inches Cucumber
Dill
1 clove/teaspoon Garlic
1 teaspoon Olive oil
Lemon/lime or vinegar
Salt and pepper
Finely grate the cucumber and chop the dill
Strain the cucumber thoroughly with a clean kitchen towel
Mash the garlic and the olive oil in a mortar and pestle
Add all three to the Greek yogurt
Squeeze in some lemon/lime or vinegar
Add a generous pinch of salt and small pinch of pepper
Optionally add some extra olive oil
Stir and enjoy with your favorite snack
