Per brownie: ~165 calories | 15g protein | 6g fiber

Ingredients

1 can pumpkin purée (about 425g)

50g chocolate protein powder

50g cacao powder

2 whole eggs

100g egg whites

2 tbsp stevia (adjust to taste)

1.5 tsp baking soda

1.5 tsp baking powder

50g Greek yogurt

1 tsp instant espresso powder (optional)

A few splashes of vanilla extract

35g Lily’s chocolate chips (for topping)

Directions

Preheat oven to 350°F (175°C). Line a 9x13 baking dish with parchment paper.

In a large bowl, mix all ingredients except the chocolate chips until smooth and well combined.

Pour the batter into the prepared baking dish and spread evenly.

Sprinkle chocolate chips on top.

Bake for 25–30 minutes. The center will be slightly jiggly but sets as it cools.

Let cool completely before slicing. Texture becomes fudgy once cooled.

Slice into 6 brownies.
